These delicately spiced cardamom biscuits are delicious and make a really pretty gift or treat when decorated with icing and rose petals. They are simple to make and don’t require chilling before baking so you can have some biscuits ready to eat relatively quickly.
- 100g softened butter
- 55g caster sugar
- 170g plain flour
- 1 tbsp ground almonds
- 1tbsp milk
- 1tsp ground cardamom
Preheat the oven to 180c and line a baking tray with grease proof paper. If you have a food processor then you can simply add all the ingredients and pulse until it forms a soft dough. If not then cream the butter and sugar and then add the flour bit by bit followed by the remaining ingredients.
Work the dough gently into a smooth ball and roll out on a floured surface to approximately 1 cm in depth. Then using a cookie cutter cut out shapes and place them on the tray; it should make around 20 biscuits (depending on the size of cutter and how much dough you much along the way!). Bake in the oven for 12-15 minutes.
Allow to cool completely. You can decorate the biscuits with 200g of icing sugar and a couple of tablespoons of lemon juice or water (just make sure that the icing is a thick paste so that it doeskin run too much). Sprinkle rose petals over the top to give a subtle rose flavour.
